Banana Pudding Love

Oh my gosh, this is the best little mini bite you'll ever shove in your mouth, seriously!

This mini tastes like fresh banana pudding and is gluten free too. If you don't want to make them gluten free, just use a traditional yellow or white cake mix instead of the gluten free version. 

Banana Pudding Minis
1 box Gluten Free Betty Crocker yellow cake
1 cup mashed banana (I like fresh banana)
1/3 cup melted butter (hemp is great)
1/3 cup water
3 eggs beaten
2 tsp vanilla (If you're gf, watch ingredients)
2 tbsp banana pudding mix 
16 gluten free vanilla wafers for crumbs plus more for topping
mini muffin tins/papers
       Banana pudding frosting + whipped topping

Combine cake mix with banana pudding and then add wet ingredients. Mix together like a traditional cake. You'll have lumps because of the banana. 

Place crumbled vanilla wafers into the bottom of each muffin cup. Fill your mini cupcakes with a little over a tablespoon of mix and shake the pan so the bubbles even out. Bake at 350°F for 10 minutes, turning the pan halfway through the baking time. Depending on where you are located, you an give it a giggle test or toothpick test and adjust your baking time. Top with your frosting after they have cooled and add a mini wafer to the top. Yay, happy banana cupcake day! 

  • Pudding Frosting and Whip
I simply added the remaining pudding mix from the cupcake batter to 1 1/2 cups whipped topping and 1/4 cup milk (If you can't use milk, unfortunately almond and coconut wont work, so just use the topping or stick to a prepared vanilla frosting with your pudding mixed in for taste. 
The pudding should be cold, if your milk or frosting seems wet, place it in the fridge before you top your minis. Then top with more whipped topping and a wafer.

Leftovers You'll Love

It's always a challenge each year to come up with some new creative ways to dress up those leftovers. The days following a big holiday meal can be exciting, trust me.

 After yesterday's epic meal the possibilities are endless. These following recipes are gluten free, but I've included the traditional method.

4 slices bacon 1 large yellow onion
1 stalk celery
1 large carrots cubed (leftover) 1 large jalapeno pepper or for a smoky flavor (1 small can of green chilies)
1 large potato cubed 2 cups gluten free chicken broth/Veg is great too 1 1/2 cups leftover creamed corn 10 oz. cooked chicken breast 1 cup cream 1 1 cup half and half/or milk Salt and Pepper to taste


chopped parsley diced green onion (garnish) shredded pepper jack cheese 

Saute bacon until crisp and set aside. In the bacon fat, saute the onion, carrot, celery and jalapenos until slightly softened. Season with salt and pepper. Add creamed corn, chicken stock, and potatoes and cooked chicken to pot and cook for 20 minutes. Add half and half and cream and bring to a bubble. When potatoes are tender the soup is ready to go. Add your parsley and garnish and a sprinkle of jack cheese and you're ready to enjoy!

2 Rolls
4-6 slices of Turkey
3 eggs scrambled
2-4 sprigs of chives
1 Tbsp milk
Cheddar cheese
Salt & Pepper to taste

Scramble your eggs to desired consistency. I like to scramble mine in coconut oil. Add chopped chives and season with salt and pepper. In your pan heat the turkey sliced stacking cheese on top till it melts. Toast your rolls on the side of your pan until slightly crisp. Stack it high, add some fruit or cranberry sauce on the side.

Stuffing Stuffed Peppers YUM!
I woke up this morning to see this recipe on a rerun of The Dish by Daphne Oz. We are making them tonight!

4 cups leftover Stuffing
2 cups leftover Pulled Turkey
2 cups leftover Gravy
1/2 cup Greek Yogurt
1/4 cup Chives chopped

1/2 cup grated Gruyere
Olive oil
Salt and Pepper to taste

Preheat the oven to 375 degrees
Cut the top 1/4-inch off of each bell pepper, removing the stem, seeds and ribs from inside the peppers. Take out everything that is white. These are all bitter tasting and will not go well with the stuffing

Drizzle a little olive oil in each pepper and season the inside with salt and pepper.
In a large bowl, toss together the leftover stuffing, turkey and gravy. Spoon about a cups worth of the mixture into each pepper.

Place peppers in a greased baking dish and bake for 15-20 minutes. Make sure all the ingredients are the same temperature or the stuffing with not cook right, causing the peppers to burn and blacken.
Remove dish from the oven and top each pepper with a couple tablespoons of Gruyere. Or any other cheese you have leftover in the fridge

Turn the oven to broil.  Broil the peppers for 2-3 minutes, or until the top is bubbly and golden.
Garnish with a dollop of yogurt and a sprinkle of chives.


This next salad is one of those ones that gets lost in the back of your Aunt Mertles recipe book, but I tell you what, those are the best lost recipes ever! I can't stand green olives, but there is something about this salad where it all just works. This recipe is low glycemic as well so it helps with all the holiday heaviness.

Zippy Turkey Salad2-3 cups leftover turkey shredded into bite-sized pieces
1 cup diced celery (about 3 stalks celery)
1 cup large green olives with pimento, sliced into crosswise slices
1/2 cup thinly sliced green onions
1/3 cup mayo
1/3 cup plain yogurt (if you don't want to lighten up the recipe, just go with the mayo)
2 tsp. green olive brine (liquid from the jar)
2 tsp. lemon juice

1 tsp. Dijon mustard
1 tsp. celery seed or celery salt
salt and fresh ground black pepper to taste (I didn't use much salt because the olives are salty)


Shred your turkey and place in medium bowl. Dice celery, olives, and onions and combine with the turkey. 
In a mason jar, combine mayo, yogurt, green olive brine, lemon juice, Dijon mustard, celery seed, salt and pepper and use a whisk to mix together.

Oh my gosh it's so good. 


I thought this was a fun leftover recipe. It sure satisfies that late in the evening need for a tasty snack with a movie. 

Thanksgiving Nachos
thanksgiving leftovers nachos1 bag corn tortilla chips (Not all corn chips are Gluten free, check!)
2 cups shredded cheddar cheese
1 lb chopped turkey breast
1½ tablespoons gluten free taco seasoning (walmart has a good price)
1 (16 oz) can re-fried beans (most varieties are GF, but doesn't check)

1 cup cranberry sauce
2 tablespoons chopped fresh cilantro
2 tablespoons lime juice
2 jalapeno peppers
Salt, to taste
1 green onion, sliced
Sour cream, for serving

Directions
Heat oven to 425°F. Lightly grease a 13-by-9-inch baking pan. Place a layer of tortilla corn chips in the bottom of the pan; sprinkle with 1 cup cheese. Top with more tortilla chips (you may not use the whole bag).
Lightly toss turkey with taco seasoning; sprinkle half of the turkey over the cheese. Top evenly with re-fried beans. Top with remaining turkey. Sprinkle with remaining 1 cup cheese.
Bake 5 to 10 minutes until cheese is melted and ingredients are warmed through. Meanwhile, make the cranberry-jalapeno salsa: In a small bowl, combine cranberry sauce, cilantro and lime juice. Seed and finely dice one jalapeno pepper; stir into salsa. Add salt to taste.
Slice remaining jalapeno; sprinkle over top of baked nachos, along with sliced green onion. Serve with salsa and sour cream.


Now for something sweet...

Gluten Free Cranberry - Citrus Muffins
Makes 12 

Gluten Free Cranberry - Citrus Muffins1 pkg Yellow Cake Mix or (we used Betty Crocker Gluten-Free Cake Mix)
1/2 cup of butter, softened
3 large eggs
2 tsp vanilla
2/3 cup milk (or almond milk to be dairy free)
1/4 tsp fresh orange zest
2 tsp cinnamon
1 tsp baking powder
3/4 cup of leftover cranberry sauce with berries 


(For Streusel Topping / Optional)
2 tbsp white sugar
3 tbsp brown sugar
1/2 cup crushed walnuts (optional, can sub almonds or omit also)
1 tsp cinnamon



Preheat your oven to 325F for a dark or nonstick muffin pan. For shiny metal, use 350F.

In a small bowl, combine the streusel ingredients and set aside.
Combine all ingredients about the streusel section except your cranberry mix.
Use a spatula to gently fold your cranberry into the batter.
Use a standard measure, like a tbsp, to fill your muffin cups about 2/3 of the way full.
Sprinkle streusel topping generously over the muffin tops.
Bake for about 20-25 minutes and remove when edges of the muffins are golden brown.

Think beyond the ants on a log, cross hatched peanut butter cookies and peanut butter and jelly sandwiches. This is the age of experimentation and peanut butter is the perfect medium. A recent study performed at Kansas State University, shows that Americans consume enough peanut butter each year to coat the floor of the Grand Canyon. That is a lot of peanut butter. In fact the closest calculation shows that Americans alone go through 857 million lbs. that is about 3.36 lbs. per person.  The peanut has a long history in South America, but in 1890 Dr. John Kellogg of corn flakes fame created peanut butter as a protein substitute for his patients with bad teeth. It was bottled up by machine in 1903 and promoted as a health food that revolutionized the way America enjoys this special comforting food product.
This unique legume is a nutrient rich power house. A 2 tablespoon serving contains 7 grams of protein. These powerful amino acids in the protein help build healthy muscles as well as helps repair damaged tissues. High in healthy fats, potassium, folate and fiber and is a great source of monounsaturated fats.
Peanut butter does a great job keeping you fuller longer. When you purchase peanut butter, please make sure you pay attention to the label. Buy a brand that ONLY contains peanuts, salt and nothing else.
I'll never forget the mortified look on my Fathers face when my son was 3 and we were standing in the bulk section of Whole Foods market and he was mesmerized by the fresh peanut butter processor and a customer who was using the machine. He proceeded to put his finger in the fresh grind of peanut butter as it was about to fall in to the woman's container. He pulled his finger out of his mouth and said "mmm yummy". I almost died. That is the power of peanut butter. 

Peanut Butter, Carrot and Ginger Dressing

Provided By: Peanut Butter & Co.
Peanut Butter & Co
2 medium carrots, peeled and coarsely chopped
¼ cup chopped, peeled fresh ginger
1 shallot, chopped
1 small garlic clove
½ cup Smooth Operator, The Bee’s Knees or Old Fashioned Smooth peanut butter
¼ cup rice vinegar
1 tablespoon soy sauce
Sliced cucumbers and scallions for serving
Combine first 4 ingredients in a food processor; pulse until vegetables are finely ground. Add peanut butter, vinegar and soy sauce; process until a smooth dressing forms. Season with salt and pepper; adjust consistency with water.
This sauce is so versatile. Here are a couple of my suggestion: 
-Mixed greens, sliced hot house cucumbers, spring onions, dried cranberries, & sliced pineapple
-Boston Bibb lettuce cups, sliced celery, carrot, red onion, raisins and cubed chicken & a pinch of cayenne pepper.  Combine all veg, cayenne and chicken excluding lettuce cups and mix with 2-3 tablespoons of the dressing and serve inside the lettuce cups. I often make a quick topper of sour cream or yogurt mixed in the Cuisinart with a handful of cilantro, dill and salt and pepper and drizzle over the top of the lettuce cups.

Peanut Butter & Banana Smoothie
1 container fat free vanilla yogurt
1/2 cup skim milk
2 T. creamy peanut butter
1 medium banana, sliced
15 chocolate chips
1/2 cup ice cubes
*Here's a super tip...the night before you make the smoothie, freeze your peanut butter. This will eliminate the need for the ice cubes which can water down the creaminess of the smoothie. Just add a smidgen more of milk.




Sesame Ginger Spaghetti
1 pound linguine or spaghetti
Salt and pepper
2 boneless, skinless chicken breast halves, trimmed
3/4 cup creamy or crunchy peanut butter
3 tablespoons reduced-sodium soy sauce
3 tablespoons seasoned rice vinegar
2 tablespoons sesame oil
1/2 teaspoon ground red pepper
1 tablespoon finely chopped fresh ginger
1 scallion slice on a diagonal 
Handful of shredded carrots & snow peas, & sliced red bell pepper
3 tablespoons toasted sesame seeds and some picked cilantro

Cook pasta in a large pot of boiling salted water, according to package directions, until al dente. Reserve 1/2 cup cooking water and drain pasta in a colander.
 Lightly oil a ridged grill pan; place over medium heat. Season chicken with salt and pepper. Grill chicken for 6 to 8 minutes per side, until just cooked through. Transfer to a cutting board to cool slightly. Chop chicken. In a large bowl, whisk peanut butter, soy sauce, vinegar, oil, ground red pepper and ginger until blended. Season with salt and pepper to taste.
Slice carrot, celery, red bell pepper and mix with pasta and dressing. Garnish with sesame seeds, sliced scallion and snow peas and serve. 

Peanut Butter Cupcakes with Cream Cheese Frosting

For the filling:
1 cup confectioners’ sugar
¾ cup Skippy natural creamy peanut butter
4 tbsp. unsalted butter, at room temperature
½ tsp. vanilla extract
For the cake:
1 2/3 cups all-purpose flour
¾ cup unsweetened cocoa powder
1 tsp. baking soda
½ tsp. salt
1 cup sour cream
2 tbsp. milk
1 tsp. vanilla extract
8 tbsp. unsalted butter, at room temperature
1½ cups sugar
2 large eggs
Directions:
Preheat the oven to 350° F.  Line two cupcake pans with paper liners.
To make the filling, combine the confectioners’ sugar, peanut butter, butter and vanilla extract in a bowl.  Beat with an electric mixer on medium speed until well combined.  Roll the mixture into 1-inch balls (at least 24) and set aside on a baking sheet.
Spoon a tablespoon or two of batter into the bottom of each cupcake liner.  Place a ball of the peanut butter filling in each cupcake well and top with the remaining batter so that all the cups are filled.  Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.  Allow to cool in the pan for 5-10 minutes, then transfer to a wire rack to cool completely.
Peanut Butter Cream Cheese Frosting by cooks country
10 ounces cream cheese, at room temperature
1 stick (4 ounces) unsalted butter, at room temperature
5 cups confectioners’ sugar, sifted
2/3 cup Skippy natural smooth peanut butter,
In a large bowl with an electric mixer, beat the cream cheese and butter until light and fluffy. Gradually add the confectioners’ sugar 1 cup at a time, mixing thoroughly after each addition and scraping down the sides of the bowl often. Continue to beat on medium speed until light and fluffy, 3 to 4 minutes. Add the peanut butter and beat until thoroughly blended.

Apple Sandwiches with Granola and Peanut Butter recipe from Whole Foods

2 small apples, cored and cut crosswise into 1/2-inch thick rounds
1 teaspoon sprite or lemon lime soda
3 tablespoons peanut or almond butter
2 tablespoons semisweet chocolate chips
3 tablespoons granola
If you won't be eating these tasty treats right away, start by brushing the apples slices with lemon soda to keep them from turning brown. (the original recipe called for lemon juice, but I think it makes it taste weird, but you choose)
Spread one side of half of the apple slices with peanut or almond butter then sprinkle with chocolate chips and granola. Top with remaining apple slices, pressing down gently to make the sandwiches. Transfer to napkins or plates and serve.
