Game Day Grub


Everybody needs a recipe for pulled pork. Well I just so happen to have the best recipe for Carolina style pulled pork. Vinegary goodness in a tiny mouthful. These little sliders will be perfect for game day. Serve up with coleslaw, a pickle and your taste buds will be satisfied. 

You'll need your crock pot, some liquid smoke and about 6-8 hours of relaxation time.

This recipe needs probably two crock pots or a large crock. I also recommend cutting the pork in half if it's a large butt.

Carolina Pulled Pork Sliders

1 or 2 onion, quartered
2 T brown sugar
1 T smoked paprika
2 tsp salt
1/2 tsp ground black pepper
1 (4-6 lb) pork butt or shoulder roast


2-3 T liquid smoke
1 C cider vinegar

1/3 C Worcestershire sauce
1 1/4 tsp crushed red pepper flakes or granulated red pepper
3 tsp sugar (believe it or not, you can use splenda, it works great)
1 tsp dry mustard
1 1/2 tsp granulated garlic
1/4-1/2 tsp cayenne pepper


Slider buns-I found mine at Trader Joe's

Place onions in crock pot on the bottom.
Blend brown sugar, paprika, salt and pepper; rub over roast.
Place roast in crock pot. Drizzle liquid smoke over roast.
Combine vinegar, Worcestershire sauce, red pepper flakes, sugar, mustard, garlic and cayenne pepper and stir to mix well.
Drizzle about 1/2 of mixture over roast. 


Cover and refrigerate remaining mixture so you can make the finishing sauce.
Cook roast on low for 8 hours. I started it before bed and cooked it through the night.
Remove meat and onions, discard onions and shred meat. Depending on your cut of meat, there will be rendered fat. You'll want to discard all but 1/2 Cup. 


Finishing BBQ sauce:
Add 1/2 Cup of juices from crock pot and remaining vinegar mixture together in a pot or pyrex container. 
Add
1/2 C ketchup
1 1/2 T prepared yellow mustard
1/2-1 T  brown sugar (to taste)
1/2 T cider vinegar (depending on how much tang you want, omit if you wish)

Cook on stove top or in the microwave(covered) for 2 minutes. It should have a slight bubble. On the stove top you'll need to watch it close to it doesn't stick and burn. 

I shred my pork and then add some of the wet bbq sauce and then bottle up the rest of the sauce for eating time. Make sure to top your pulled pork sliders with some creamy coleslaw and a sweet little pickle. 

Creamy Coleslaw

1 28oz bag coleslaw 
1 C mayo
2 T sugar (Splenda works great)
2 T white vinegar or rice vinegar
1 1/2 tsp lemon juice
1 T prepared horseradish 
1/2 tsp onion powder
1/2 tsp dry mustard (optional)
1/2 tsp celery salt
1/2 tsp salt and black pepper

Whisk your mixture and then dress your cabbage and carrot mix. You can add a little grated onion if you like that sorta thing.
