This week on Sam's Cooking Corner

I've watched my Mom cook since I was little. She always lets me add ingredients and use the mixer. I like to make up recipes and try to do new things. I've been asking her to make me a dot.com, but this time she thought it was a good idea.  





Very Goud'a' Bacon Mac & Cheese
6 cups water
1 teaspoon salt
1 pound elbow macaroni/ we used a gluten free barilla elbow mac
3 tablespoons butter/ we used vegan hemp butter
1/2 cup half and half 
1 small can of evaporated milk
1/2 cup smoked Gouda cheese, grated
1/4 cup sharp cheddar cheese, grated
1/4 cup shredded Parmesan cheese 
1/4 tsp garlic salt
1/8 tsp onion powder 
1 tsp corn starch
1/4 cup bacon crumbles, it's about 6 pieces of bacon chopped

Bring your water to a boil with your tsp of salt. There is no need to wait for the water to boil before adding your pasta, it's just up to you. For gluten free pasta, it works better to add the pasta noodles with the cold water. Cook noodles according to the box directions and drain, reserving a little pasta water. 
Toss your grated cheeses with cornstarch.

Place your noodles back into the pot and add butter, coat all the noodles, add evaporated milk, half and half, garlic and onion seasoning and turn the noodles back on low. Add your cheeses and melt stirring carefully. It wont look like the cheese will melt well, but give it time. When the cheeses are melted, add your bacon and you're ready to serve. 

*another alternative is to bake this in the oven and sprinkle the top with some panko bread crumbs. Ian's makes a really wonderful gluten free panko that you can mix with a little melted coconut oil. I sometimes also chop very fine jalapeno and put it into the pasta. It's delicious!

 Here's a couple of tips from my Mom. Use a pair of tongs, so your fingers don't get crazy dyed. When you went the marshmallows, make sure it's slightly warm water and make sure you wash all the cornstarch off of the marshmallow and it's fully saturated.

They have some amazing flavors now. I used a yummy melon and grapefruit flavor along with all the other traditional flavors we used to make it a beautiful rainbow.

6oz box of jello fuxion 
Large gallon size bag
39 marshmallows...seriously, 39 that's how many you'll get out of one package
A foil lined baking sheet
Wet your marshmallows, toss them in the plastic bag, shake, shake shake. Remove with tongs, let them dry for an hour.
