Kale, Kale, Kale...So Great, You Wont Need To Sneak Them In!


 Kale...what can we say about it. It's green, it's traditionally decorated salad bars everywhere, but it's much more than that. It's one of the worlds healthiest foods. It is a very good source of vitamin B6, dietary fiber, calcium, potassium, vitamin E, vitamin B2, iron, magnesium, vitamin B1, omega-3 fatty acids phosphorus, protein, folate, and niacin. Kale can provide you with some special cholesterol-lowering benefits if you will cook it by steaming. Kale's risk-lowering benefits for cancer have recently been extended to at least five different types of cancer. 1 cup of Kale is about 36 calories. If you're juicing, toss in a handful after you've steamed it and you'll maximize the health benefits. For people like me who suffer from inflammatory/autoimmune diseases, this vegetable is a life saver. It's high Omega-3 properties help heal the gut and cleanse the blood. Just eating 1 cup a week boosts your immune system and sets you on the right track to receive the full benefits of this awesome food. I have never grown it in the garden. I hear it's really easy and worth it, but to make life easy, I love Glory brand from Trader Joe's. It's only $1.39 a bag. I don't enjoy kale chips, I think they're gross, but what I do like is fresh raw kale, sprinkled with lemon, olive oil, salt and pepper and onion powder. I sometimes put raspberry balsamic drizzle on it and it's amazing.

Okay, now the recipes. I previously did a quinoa, butternut squash and portobello recipe you can find under my flavorful paleo post. Check it out!
Kale Stuffed Squash
 You will need a medium sized butternut squash, washed and cut in half, or you could also use acorn squash (4) also cut in half, de-seeded and salted and oiled. Place it in the oven flesh side up at 350° for 20 minutes.
Remove from oven and set aside. While the squash is cooking you'll need to start the sausage and kale mixture.



In a large skillet, add
  • 8 ounces Italian turkey or pork sausage, casings removed (I used jimmy dean sage sausage)
  • 1 large leek, white and light green parts only, halved and sliced
  • 2 cloves garlic, finely chopped
  • 4 cups tightly packed torn kale
  • 1/3 cup reduced-sodium chicken broth (use veg, but season extra with herbs)
  • 1/4 cup chopped pecans or pine nuts 
  • 2 tablespoons grated fresh Parmesan
  • 2 tablespoons panko breadcrumbs (gluten free panko is available. Kinnikinnik and Ian's makes a good tasting substitute.) 
Brown sausage and drain excess oil. Saute leek, garlic and kale in skillet until the kale starts to slightly wilt. Add nuts, broth and continue cooking about 5 minutes or until the broth becomes concentrated. Remove from heat to a bowl and add breadcrumbs and cheese. 

Tightly pack into the squash cavity, drizzle with olive oil and bake in a 375° until golden brown and bubbly, usually about 15 minutes. Depending on the moisture in the mixture, you can add water on the sheet pan while backing to keep the squash and sausage mixture moist. You can also stabilize the squash with a tin foil ring.
*If you'd like to use a prepared gluten free bread in place of panko that works great too.





This is one of my favorites soups. I don't make it often enough, but as fall is creeping in, it's a perfect weekend soup to cook while you're in church.

Kale, Sausage and Potato Soup serves 6
1 lb ground sausage (I prefer Jimmy Dean Sage sausage, it's gluten free)
2 C. Coconut Milk (Unsweetened) + 1/2 C Coconut Creamer (Trader Joe's, Whole Foods)
                          you can also use Half and Half
2/3 C. sliced or cubes red potatoes
4 C. Low sodium chicken or veggie stock (check for gluten, it hides everywhere)
1 medium Onion, cubed or minced-I use a Cuisinart blender to make mine small
1/2 tsp. Oregano
Pinch of Salt
1/2 tsp garlic, minced
1/2 tsp. Red Pepper flakes to taste
1/2 tsp ground white pepper
2 C torn Kale
             *If you're vegetarian, omit sausage and add 2 cups northern white beans and 1/2 cup carrot rounds to fortify the soup and give it body.

In your stock pot, brown the sausage, leaving it in bite sized to large chunks, discard rendered fat.
Add onion to sausage and saute with oregano, salt and red pepper flakes and garlic. Add stock, coconut milk or half and half, potatoes and cook for 15 minutes, add kale and continue cooking for 10 min. Should be slightly boiling. You don't want to break up the potatoes. Before serving, add coconut cream and serve.

If you want to cook everything in a crock pot, cook sausage ahead of time or buy precooked sausage. You'll need to cut the kale in larger pieces, but you can then add all ingredients to pot all at once, excluding the coconut cream until the very end. Place the crock pot of low for 4 hrs.

Paleo Scrambled Eggs with Kale

  • 2 eggs
  • 1/2 avocado
  • Handful of kale about 1 heaping Tbsp
  • 1/2 tsp coconut oil
  • ¼ cup mushrooms
  • salt and pepper to taste
Cook mushrooms and kale in coconut oil on medium heat, add eggs and avocado, being careful not to brown the eggs or avocado.




Kale, Cauliflower and Chickpea Curry
2 Tbsp coconut oil
2 Tbsp mustard seeds
15 coriander seeds (seems funny to count such a small amount, but do it)
1 tsp cumin seed
1 medium onion, chopped small
2 tsp. garlic minced
1 large tomato or 1/2 C canned stewed tomato
1/2 C Chickpeas
1/2 tsp curry powder
3 C. Cauliflower florets
1/2 tsp Red Lentils, rinse 2 times
3 cups stock or water (I use veg stock)
Salt
1 bunch Kale (about 1 1/2 C.) *You could also use Spinach or Chard
1/2 tsp Turmeric



Before you saute the veg, add red lentils, water/stock and salt (1/2 tsp) to a pot and bring to a simmer, turn burner on low and continue cooking with lid on until you have prepared the veggies below.

Place cauliflower florets on a baking sheet sprinkle with 1 Tbsp melted coconut oil, curry powder and roast in oven at 375° about 15 minutes. Cauliflower can be brown around the edges. Remove and set aside.

In a stock pot, add 1 Tbsp coconut oil and toast the mustard, cumin seeds, coriander until they begin to pop and smell fragrant. Add onion and saute until softened. Add garlic and let it become fragrant, but make sure it doesn't burn. If it burns, you'll have to start over. Then add tomatoes, and kale and turmeric.

Add all ingredients together, now including chickpeas and continue cooking for about 10 minutes. Serve alongside white rice or couscous. Garnish with fresh diced tomato.


Paleo At It's Best


Low Carb Veggie Soup
2 Tablespoons butter
1/2 cup chopped onion
1 cup finely chopped carrot
1 celery stick, finely chopped 
1 Tablespoon minced garlic
4 cups chicken broth (I usually use a mixture of low-sodium chicken broth and broth made with chicken soup base because it gives it such nice flavor)
1 medium turnip cut in to four chunks
      Once soft, mash outside of soup pot and add back in
1/2 cup water
2/3 cup cream 
2 cups chopped broccoli
2 heaping cups shredded cheddar cheese

Melt the butter in a large soup pot.  Add onions, carrots, and celery and saute over medium heat until tender.  Add garlic and cook 1 or 2 additional minutes.  Add chicken broth and turnip, bring to a boil, and cook until turnip is tender.  In place of flour I took the cooked turnip out and mashed it up. Then I add the mash, and simmer until soup is slightly thickened.  Add cream and broccoli and cook until broccoli is just tender and soup is heated through.  Stir in cheese, allow to melt, and serve.

Servings 1 1/2 Cup, Recipe makes 6 servings

Asian Pork Lettuce Wraps

2-3 lbs of pork shoulder or any type of pork roast (you could use chicken)
Salt and Pepper it up, add some garlic powder or crushed garlic, doesn't have to be fancy.
Mix all of the following:
4 TBS Coconut Aminos (find at Whole Foods or Sprouts) (or Soy Sauce if you aren't counting carb)
2 TBS Almond Butter  (Peanut Butter would be fine too)
1 TBS Honey or Agave (I eyeball it)
2 TBS Vinegar (I’ve used a bunch of different ones, just to get some acid in there)
2 tsp Sesame Oil
1 TBS Sriracha (or more if you are real spicy)
1/2 tsp of Black Pepper
1 TBS minced ginger  (jarred is just fine, I admit I do it too!)

Method
1.  Put prepared chunk of meat in crock-pot
2.  Pour sauce over it
3.  Resist the urge to add more liquid (you will want to, don’t you worry you don’t have to)
4.  Set and forget  (well for about 4-6 hours at least on your low setting)
When it is done cooking shred with a fork and serve atop your favorite lettuce and add the garnish of your choice.  I like to add pre-shredded cabbage or broccoli slaw and I love to add orange bell pepper thinly sliced.  
Try — chopped peanuts, jicama, cilantro, shredded carrots. (If you're really counting carbs, don't do the carrots) If you're not low carbing, then add a little bit of steamed rice dressed with some lemon juice and salt. Before I was paleo, this is what I did, but add an additional 54g carb to your dinner per 1 cup rice.

Pesto Pecan Chicken recipe is per chicken breast

1/4 c. pecans, chopped
1 T. Pesto
1 chicken breast, seasoned with salt and pepper

Flatten chicken breast as best as you can by placing it between two pieces of plastic wrap. You can use a can of soup to flatten the chicken evenly. Salt and pepper chicken on each side, spear on pesto and top with pecans. Bake 425o on top of a foil lined baking sheet sprayed with a little bit of olive oil. Bake covered for 15 minutes and then an additional 15 minutes uncovered so it browns slightly. Watch to make sure the nuts don't burn. 
                                                                             My Pesto Recipe + food processor
1/4 cup pine nuts or walnuts/pecans
3 tablespoons chopped garlic (9 cloves)
4 cups fresh basil leaves
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 cup + 2 T. Light olive oil
3/4 cup freshly grated Parmesan
Servings 1 chicken breast w/pesto and pecans
Calories 462 Carb 5g -Fiber 3g Fat 21g Protein 43.4g

I like to make 2 chicken breasts, enjoy one for dinner and then save one for lunch the next day. I cut the chicken breast up and put it over a salad with half an avocado and crumble 1 T. goat cheese over it with a lemon and olive oil dressing. 

Lemon Olive Oil Dressing: enough for 1 large salad
1/2 Lemon juices
kosher salt and pepper
1 1/2 Tbsp. Light Olive Oil
Shake it up and serve. If you like a little more body, add a smidge of dijon and a tiny splash of vinegar.

Gourmet Pizza

A Little Gourmet Pizza to Brighten Your Day
Gourmet pizza is so easy. It just takes a little imagination and some really great dough. I don't always make my dough, sometimes I run over to the local pizza place that I like and grab a couple of balls of ready to go dough. If you want to make your own dough, then awesome! Here is a great and easy recipe. 
Pizza Dough
2 tsp dry yeast
1/2 tsp sugar
2 ½ cups all-purpose flour
pinch of salt
1 cup warm water
1 tbsp olive oil
It a food processor, combine all ingredients except water and olive oil. Sift together and as the blade turns, add water and oil. Once it pulls from the blade into a ball, it's ready. Let it sit in the fridge for 20 minutes before you take it out and roll it. As you roll it, place flour on top and bottom, but not too much...you don't want your dough to become tough and too elastic. 

I just happen to have the ingredients that went on this pizza in my pantry already, but grab the ingredients that taste good to you and you feel will be a great combination. 

Fresh pizza dough, enough to make 2 medium pizzas'
a sprinkling of flour
4 T. marinara sauce, I used Barilla brand
2 T. olive oil mixed with granulated garlic & Italian seasoning blend
3 T. olive tapenade (my own recipe below)
2 oz. goat cheese crumbled
1 T. finely chopped fresh parsley
1 T. pine nuts
marinated artichokes

I don't have a pizza stone so I lined a baking sheet with foil, oiled it slightly with olive oil and a sprinkling of flour over top. I rolled out my dough to fit and then place the dough on top of the oiled sheet. The oven should be heated to 450 and you shouldn't put the pizza in the oven until it's fulled heated. I brushed the oil, garlic and Italian seasoning around the edge of the pizza then spread the marinara sauce. I sprinkled it with olive tapenade, marinated artichokes, crumbled goat cheese and last but not least pine nuts. I baked it for 20 minutes and it came out perfectly.
Olive Tapenade
Olive tapenade is so dang easy. All you need is a food processor and make a little trip to the olive bar at the grocery store. 
For 2 cups of tapenade, you'll need

1 scoop of marinated artichokes
1/2 scoop of roasted and marinated garlic
1 scoop of the classic Greek mix that has feta squares, Kalamata, Niçoise, and Picholine olives.

Now here's the hard part. These olives aren't pitted. Before you dump all the ingredients into the processor, pull the pits out of the olives. 
Place all ingredients into the processor with 1 T. fresh parsley. You can add walnuts or almonds for a nuttier flavor. This is the best!

Try these other topping combinations:
  • sun dried tomato pesto, broccoli florets, cremini mushrooms, & gouda cheese
  • zucchini circle (thin), prosciutto crumbles, buffalo mozzarella cheese & parsley 
  • mission figs sliced, goat cheese and balsamic drizzle.
  • caramelized onions, mozzarella cheese, parmesan, italian sausage & spring mescaline piled high with a drizzle of olive oil and balsamic. Green go on after you bake of course!
  • currants, marscapone cheese, roasted yellow peppers, crumbled bacon & a drizzle of olive oil.
  • salmon, goat cheese, roasted fennel bulb, sprigs of dill and a squeeze of lemon and olive oil.
  • roasted red fingerling potatoes, shallots, leeks, and brie cheese.
 This next recipe is awesome, I stretch the dough out and grill it on the outdoor grill sometimes too.

Roasted Garlic Flat Bread
8 cloves garlic (chopped)
2 tbsp basil (chopped)
1/2 tsp salt
1/2 tsp black pepper

Roll out your dough, sprinkle with basil, garlic, salt and black pepper and bake at 425 until golden. If it looks like the garlic is getting to crispy, lower the heat to 400 and spritz the oven with water.
